Creamed Potatoes
INGREDIENTS Potatoes, Onion, Butter, Cream or Milk
DIRECTIONS
- Cook two peeled potatoes in the microwave ~4-5 minutes on high. Cut into cubes.
- Sauté 1 medium onion (diced) in butter or olive oil and add ~1 C of cream or a mix of cream and milk.
- Season with salt and pepper.
- Simmer briefly, then add cooked, potatoes and continue to heat on low until ready to serve. As they are eaten, the potatoes can be mashed with a fork into the cream and onion sauce.
